As the weather warms up, I find myself more tempted to purchase unhealthy treats to help myself cool down. Strawberry Lemon Slushes, Concretes, and Frappuccino’s call my name. Especially if I happen to be out and about during afternoon “snack” time…you know what I’m talking about. And, quite frankly, so do businesses as they try to tempt me further with happy hours!

Paleo Cranberry Orange Scones (Plus-Replacing Refined Sugar)

I guess that place with the very cold sugar milk that has a name like a frigid rock must have it out for me.

Justin and I decided to “live it up” yesterday when we I said it would be a fantastic idea to go to Wilson’s Creek Battlefield as a family. This would have been great, except both of our kids were riding in strollers and it just wasn’t what I pictured in my head. We walked down the road (not a trail like I envisioned), got about a quarter of a mile out and I said, “We can’t go any farther because we’re going to have to walk back up this hill!” We then proceeded to walk back to our car and DRIVE around the Battlefield. I think my three-year-old son was a bit disappointed because he just kept saying that we were lost and he wanted to go home :). Things just don’t always turn out quite the way I picture them.

BBQ Fixin’s: Mint Chip Coconut Milk Ice Cream

So I must confess. I don’t follow a paleo diet 100% of the time. There. I said it. Please don’t leave me mean comments, or worse: stop reading my posts!

Today there were these cupcakes…ice cream cupcakes to be exact. And 2 lovely ladies I have the pleasure of working with convinced me to split one with them 3 ways…and then of course there was a different kind to try so I split another one. Overall I didn’t quite eat an entire ice cream cupcake :). Please forgive me for my honesty. I. AM. NOT. PERFECT. Nor will I ever be. And the cupcake was really good.

Moving on. To a recipe that allows you (and me) to enjoy an ice cream treat without large amounts of sugar and it involves absolutely no dairy! I have some terrible seasonal allergies, and although I can’t say they have gone away completely, the amount of congestion I endure is much less since I have stopped eating dairy regularly. However, when I do eat it (like today) I can definitely tell.
